The development of nanoscience and the benefits of its application have made it an essential tool in Analytical Chemistry. Fundamentally, the particular characteristics of nanomaterials associated with their high surface area and unique physico-chemical properties provide them with an important role in carrying out very sensitive and efficient methodologies. This is also of great importance in the field of food science, in which nanomaterials are involved in several steps, from food production, processing, and storage to the evaluation of minority components such as hazardous substances, biomarkers, or degradation products, even at very low concentrations. Thus, the use of these kinds of materials in the area of food analysis constitutes an excellent tool to obtain solid knowledge about food products, their quality, and their safety.
The aim of this Special Issue is to present the most recently applications of nanomaterials in food analysis and provide an overview of the main trends in the area. Topics include but are not limited to the following:
- Nanomaterials as extraction sorbents.
- Nanomaterials as stationary phases in chromatography and electrophoretic applications.
- Nanomaterials as detector-enhancement substrates.
- Food production.
- Food safety assessment.
